Keep your launcher very, very fast.
While I love all the add ons people are suggesting I would hate to see Apex Launcher go through the typical 3rd party Android launcher cycle of working great when it first comes out but then getting bogged down and buggy in future releases when trying to cater to everyone suggestions for improvement.
Very fast and extremely smooth is what I look at when installing a launcher. Not a crazy amount of features that I may or may not use.

ability to arrange apps into pages like touch wiz 4
Touchwiz 4 has an option to add pages. In touchwiz 4 Apps don't necessarily need to fill an entire page before a new page can be used. It would also be nice to have an option to add folders in the app drawer.

Better and simpler App Drawer
1. Folders on Drawer: drag and drop apps into the folder created on the drawer like TouchWiz UX. (NOT like Nova where you have to select the apps you want in a folder.)
2. Arrange apps in the drawer like the TouchWiz. I don't want my apps sorted alphabetically. I want the apps I use more often together!
For me this is much more convenient than tabs etc... Please, please take a look at the app drawer options on the Samsung Galaxy S3. If you do that a I'll ditch TouchWiz and buy your pro launcher!

1. Custom grid size of app drawer (rows and columns), 2. Icons labels for the dock icons, 3. App drawer tabs
1. Ability to change the number of rows and columns of the app drawer
2. Ability to add labels on the icons of the dock
3. Ability to change the look of the tabs of the app drawer with icons. Now they are shown with letters.678 votes -
Galaxy S3 screen transition
It would be awesome to have that transition integrated in the launcher.

Homescreen profiles
Ability to setup different homescreen profiles, (such as work, home, and travel) that allows a user to have different customizable screen configurations (widgets, shortcuts, wallpaper) that can be saved and easily switched between. Example: A work profile might have a work appropriate wallpaper such as the company logo, corporate email widget on the homescreen, and quick contact shortcuts in the dock bar at the bottom of the screen. Home profile might have a music widget, gallery widget, phone and messaging shortcuts in the dock bar, and a sports team wallpaper. Travel profile might have maps and navigation shortcuts and widgets…

Free resizing of widgets (ignore grid)
Background: It is useful to have 5x4 for instance, but many widgets are not ready for that and they are garbled / miss some information.
It would be a killer feature (nobody has it, right?) to allow free resizing of widgets (or with different, much finer grid: let's say 10x10 or more). I don't see big problem in that since the overlapping has been already implemented.

Customize apps icons and names in drawer
An ability to customize the apps' icons and names in drawer. Like in homescreen. You can rewrite the actual "hidden apps" list and convert it in an app list, where we can modify name, icon, and an option to hide it in drawer.

Support for Backing up Home Screen Widget Layout
Currently Apex backs up only the icons and their hierarchy i.e. nested icons in folders. Required is a complete home screen layout backup and restore.

Dock Icons should have a reflection. Example inside.
I think that a reflection in the dock icons adds a very polished look to the launcher. It would definitely give it a one up over its main competitor, Nova launcher.

Different widget layouts for portrait and landscape
Coming from maemo it would be good to have seperate layouts for portrait and landscape, so you can have odd number grids without distortion or losing a row

smoother scroll between homescreens
The scroll from one page to the next seems to consist of two movements, using all homescreen scroll options: the departing screen pauses half-way and then accelerates away. I would like the arriving and departing screens to slide effortlessly into place. the jerky movement that I described suggests poor phone performance, which I know is not the case. Thank you very much.

Two lines for icon text like you get with ADW.
Two lines of text under an icon when there are two words instead of one line that fades out to ....... when it is too long.
ADW has the top line in a bigger font than the bottom and slightly overlapping. It looks pretty good.

Be able to change the position of the dock
Instead of the dock being stuck at the bottom of the screen it would be nice if you could decide where it would go.

Galaxy S3 Jelly Bean style folder icon stacking (screenshot inside)
See what I mean:
It looks similar like the "Fan" style in Apex Launcher, but it is not the same, and there is a fourth app icon visible, not only three.

It would be absolutely awesome if you made some launcher specific full page widgets, such as a full page calculator, full page calendar, full page contacts page, full page messaging screen, full page facebook/twitter.
Also folders in app door would be sick!

gestures on different parts of the homescreen
It would be great if I can split the homescreen in half, so that the same gesture can have two different actions when performed on the two halves of the screen.
An example of this would be, I currently use the swipe down gesture to open the notification tray (yes, reaching to the top is hard for a big screen device and i have short thumbs). When Android 4.2 comes out, I want to be able to swipe down on the left for notifications and swipe down on the right for quick settings.just a thought.
