One X button reassignment
I own an HTC One X and was wondering if the multitasking button could become (or have the option to become) the Menu button, with multitasking as a 'hold' on the button

That's a ROM function, not a launcher function. If you use a ROM like AOKP that allows you to customise your naviation bar buttons then you can assign the 3rd button to be menu and even change it's icon to match. Alternatively you can edit your systemui.apk but that will take a bit more work. Look around for tutorials
